Vegan Granola

Easy vegan granola

3 C Old Fashioned Rolled Oats
1/4 C wheat germ
2 T veg oil1 C nut/seed mixture (I used sunflower, almonds, pumpkin and walnuts)
1/2-1 C coconut (depending on how much you like)
1/2 C Agave Nectar or Maple Syrup (I used a combo of the two because I ran out of maple syrup)

1/2 t salt
2 T veg oil

-oil a rimmed cookie sheet and set aside
-preheat oven to 325 F
-toast oats over medium low heat until fragrant (a few minutes), add nuts/seeds and coconut and toast another 2-3 minutes, stirring frequently.
-add remaining ingredients, stir to incorporate and spread onto the cookie sheet
-bake for 20-25 minutes, tossing once or twice until browned
-enjoy with soy yogurt or soy milk and fresh fruit

Vegan Fronch bread and Cholent Stew

Cholent Stew from Veganomicon

When I woke up this morning I knew that it would be a "spend the whole day in your pjs and avoid the bitter cold" days. It's colder than a well digger's ass as my mother would say. So, I decided to make a few loaves of bread and a nice big pot of stew. Both turned out so well that I made some more cupcakes also! Once you have a good day in the kitchen you should keep it moving right? Right!

This is the second time making this Cholent from Veganomicon. It's super duper, stick to your ribs, most delicious stew ever qualities led me back to the recipe. Not to mention non-vegans drool for it. The bread is just a no nonsense french bread from the interweb. Most breads are easily veganized and you don't have to only search for "vegan" breads. There are some great vegan bread recipes out there, don't get me wrong!

Vegan Bake Sale (part deux)

I will have to put this day at the top of my "best days ever" list! The Atlanta Vegan Bake Sale was a huge success. We sold $1365 worth of yummy vegan goods and the proceeds are going to Doctors Without Borders.

We met some of the best people today and are excited to do more good deeds with them in the future. The vegan community in Atlanta is solid. Thanks to everyone that put their hearts into this fundraiser for Haiti and thanks to everyone that came to purchase the goodies.

Special thanks to my husband for designing the flyer and supporting me through this process. Criminal Records for letting us set up inside the store and for all of their support. You guys all rule but I knew that before today. Becky Striepe of Glue & Glitter, you were my right hand lady! Star Watson & Simon Keirn of International Moustache Exchange for baking your asses off. I love you both to pieces. Leigh Saluzzi of Cosmo's Vegan Shoppe for baking and helping to get the word out. Laura Nunemaker of Abracapocus, for baking goodies and helping spread the word. Fried 'Chicken' (tofu)

This is a favorite in our household adapted from this recipe at www.vegcooking.com. Toddler approved and requested. I like to batter the tofu and then freeze it before frying but it is not necessary. Enjoy!

1 tsp. salt
1/2 tsp. onion powder
1 tsp. pepper
1 tsp. garlic powder
2 cups unbleached white flour (I used whole wheat pastry flour)
4 Tbsp. nutritional yeast (optional)
3 Tbsp. yellow mustard
1/2 cup water
2 Tbsp. baking powder
1 block tofu, drained and pressed
3 1/2 cups vegetable oil

• Mix together the salt, onion powder, pepper, garlic powder, flour, and nutritional yeast in a deep bowl.

• In a separate bowl, dilute the mustard with 1/2 cup water.

• Add 1/3 cup of the flour mixture to the mustard mixture and stir. Add the baking powder to the dry flour mixture and mix.

• Dip chunks of tofu into the mustard batter, then drop each chunk into the flour mixture and coat with the desired amount of “crust.”

• Fry the chunks in hot oil on medium-high heat in a large skillet or deep fryer until crispy and golden brown, turning as needed.

Vegan Coconut Drops

COCONUT DROPS

These are so delicious and simple! Perfect for a last minute dessert or treat!

1.5 C unsweetened coconut flakes
1 C flour
1 teaspoon baking powder
1/2 teaspoon salt (I used 1/8 teaspoon)
1/4 c sugar
1/3 c light agave syrup
1/4 c non-hydrogenated margarine, melted

-Preheat oven to 350 degrees and line baking sheet with parchment paper. In a large, dry skillet over medium heat, add coconut and stir constantly until flakes are golden brown. Immediately place in a large bowl, and allow to cool completely. Once coconut has cooled, whisk in flour, baking powder, and salt.

-In a medium bowl, combine sugar agave syrup, and melted margarine. Stir well, then add wet mixture into dry mixture. Mix until just combined, being careful not to over-beat. Use a 3-ounce ice-cream scoop to portion out cookies, and place at least 1 1/2 inches apart on prepared baking sheet, fitting about 9 cookies on a sheet.

-Bake for 10 to 12 minutes, until barely browned around the edges and no longer shiny on top. Let cookies rest on baking sheet for 10 minutes before transferring to a wire rack to cool.

Re-Conditioned Dresser Project

We purchased this amazing dresser from a friend moving out west for $35 (thanks kk). All it took was a few coats of primer (Freshaire from Home Depot), this cool oops paint that Jacob bought for $1 and an intense cleaning of the brass handles with salt and vinegar. We are so happy with the end result.

Delicious Vegan Blueberry Muffins

Nothing short of amazing! I will be making these a lot. I got the recipe from Madhuram's Eggless Cooking. Click here for the recipe. The only thing that I left out was the lemon zest due to a lack of lemons. Still the best vegan/non-vegan muffins I have ever had. YUM!

VEGAN BUNS!

I have to say that these are the best burger buns we have ever had! The recipe was super easy. The only alteration I made to the recipe is that I used 3 teaspoons of yeast instead of the 3 Tablespoons the recipe calls for and I increased the rising time by 30 mins each rising time. If that makes any sense at all. Check out the recipe here.

TODAY ON DESIGN SPONGE! This looks super easy and solves the ugly plastic bottle problem. I am going to make one of these asap!

Quick and Easy Soap Dispenser

Materials:

-Bottles (you can use plastic, but glass is particularly pretty)*

-Plastic bottle pourers (I used these but you can find more styles here)

-Soap

*Before you buy your bottle, make sure the bottle opening will fit the bottle pourer you bought.

1. Clean out your bottle and dry thoroughly

2. Fill with desired soap

3. Insert bottle pourer and make sure it is securely attached.

That’s it! Enjoy your new dispenser and say goodbye to wet, peeling labels.

Things have been beyond hectic for Thees. We purchased and moved into our very own home this month and we are all thrilled at how welcoming everyone in Reynoldstown has been to us, Johnny is growing more independent and opinionated these days and has been giving us a run for our money and to top it all off, we adopted Sarah (collie mutt) from the Fulton County Animal Control. We are still getting settled into the house and have a lot more to do in terms of making it our own but we are very happy and excited to get things done.

If the brow raising title of this record has you concerned that Greg Carbona and D~M~R have lost their collective minds and released a rap record, rest assured that this is not the case. It may also be confusing that this is not a Carbonas record since Greg, Jesse, and Chris play on the record, Dave mastered it, and Clay's fictional (for now) biography is pictured on the jacket. You should believe with perfect certainty, however, that the songwriting on GG King's debut single doesn't stray far from the stylistics employed by his previous outfit for the most part of the last decade. This one has two songs that are so brief and unforgettable that most of us will be pissed we didn't write them ourselves. We hope this will be the first of many from Mr. GG King. 100 on blue vinyl.

Today we got to seeding. We planted carrots, lettuce, scallions, basil, thyme and parsley. I also want to go ahead and plant some potatoes and tomatoes in the next coming weeks. Jacob wanted me to say that he built the lettuce boxes for me. Thank you, Jacob! YAY!

BIRTHDAY, BBQ & GNOMES! OH MY!

We had a wonderful weekend. Jacob's birthday was Friday so Saturday we went over to Star & Simon's for a fun filled day of gardening, ball chasing, dog kissing, BBQ, cupcake eating and gaming. You can see evidence of such here. Today we spent most of our day in the beautiful sunshine again, Jacob made an awesome media center and two new benches, Johnny and I just farted around and I did some sanding for an old patio set I'm refinishing. Now we are pooped, Jacob got a sunburn on his neck only (redneck), our gnome home found a gnome (thanks Star & Simon!) and tomorrow we are starting on some seeding so we are getting some sleep, Good Night!

Earth Hour was created by WWF and Leo Burnett advertising agency in 2007, when over 2.2 million Sydney dwellers switched off their electricity for an hour in a bid to raise awareness of climate change. In 2008, Earth Hour went global for the first time, taking place in 35 countries. This year Earth Hour will take place on March 28 at 8.30pm. Make it an event, have friends and family over for a candle lit dinner party. Lights out, people!

MAGICAL VEGAN CHILI

The snow was still on the ground last night and I felt like a nice hot bowl of chili so here's what I came up with. I served it with Post Punk Kitchen's Vegan Cornbread.YUM!

Vegan Chili

3 T canola or olive oil
1 medium onion, diced
2 cloves garlic, minced
1 green bell pepper, diced
1 jalapeno, chopped
1 small zucchini, peeled and diced
1 can (25 ounces) kidney beans
1 can (24 ounces) fire roasted crushed tomatoes
1 cup TVP (textured vegetable protein)
1 package soy chorizo (trader joe's)
4 cups veggie broth or water
1.5 t chili powder
1 t ground cumin
1 t dried oregano
1/2 t paprika
1/2 t salt
1/4 t ground red pepper

In large pot, heat 2 T oil over medium-high heat, saute the onion, green pepper, jalapeno and garlic until tender (approx. 5-7 minutes). Stir in all the spices (chili powder, cumin, oregano, paprika, salt and ground red pepper) and cook for about a minute, stirring the whole time so it doesn't burn.
Add the beans, broth and tomatoes. Bring to a boil, add the TVP, then lower heat to low and cook for about an hour. Meanwhile, in another pan, heat the remaining 1 T oil over medium heat and brown the soy chorizo. Add to the pot of chili after it has cooked an hour. Cook an additional 20 minutes.
Serve with a dollop of vegan sour cream, a few slices of avocado and vegan cornbread on the side.

VEGAN BANANA BREAD

I had 3 brown bananas so I decided to whip up some banana bread. It's so good! I have to stop myself from eating all of it. I have included the recipe for anyone who wants to try it.

Banana Bread

2-3 ripe bananas
1/2 cup maple syrup
3 T veg oil
1 1/2 c spelt flour
1 1/2 t baking soda
1/4 t salt
1 t vanilla
1/2 cup pecans or walnuts (optional)

-preheat oven to 350 F
-oil a loaf pan and set aside
-mash bananas, add maple syrup, veg oil and vanilla. Mix well and set aside
-in a separate bowl, mix together remaining ingredients
-pour the wet ingredients into the dry and mix well
-pour into pan
-bake 45 mins
-yum
